I just made an amazing lasagna with lots of mushrooms, spinach and Daiya. It is absolutely delicious. Daiya is a vegan cheese that melts just like cheese but without any of the animal cruelty associated with real cheese.

Wow, your lasagna really looks terrific. I've never seen a vegan cheese melting so well. I really have to get some Daiya soon!
